RECIPES Easy Vegetable Quiche

Looking for a super simple vegetable quiche recipe? Here’s my favorite recipe that I’ve made two weeks in a row.

I’ve gotten so many sweet emails from so many of you asking me if I’ve lost any weight recently.

If you’ve followed me for a while, you know all about how I lost 105 pounds about four years ago. It was a JOURNEY. I did it with a program called Optavia and drinking tons of water and making good choices, and kicking peanut butter cookies to the curb.

And during the entire weight loss journey, I didn’t really cook. Instead, I ordered a lot of grilled chicken salads and grilled vegetables and vegetable fajitas.

When that weight came off? It was AMAZING. I patted myself on the back and bought a bunch of new clothes in little sizes (I was in a size 20 when I started) and celebrated.

That was four years ago.

Truth?

In kind of embarrassing news (you know where this is heading), slowly but surely,y a little bit of weight crept on here and there without me really noticing. It wasn’t a big gain. Instead, it was 5 pounds here and 5 pounds there, and suddenly those little clothes didn’t fit anymore.

Sigh.

I realized I needed a reset.

Just keeping it real around here.

So about 6 months ago I decided I was going to teach myself to cook. I needed to learn to eat things that are good for me—things that made my heart happy (literally). And slowly but surely, the weight I’d gained came off.

And along the way, I figured out that cooking wasn’t too hard and I actually liked eating at home because I could figure out how to make vegetables and protein and eggs and cheese taste REALLY GOOD.

So I thought I’d share a few of my tried and true recipes that I’ve been eating, and I wanted to start with our number one favorite around here. I’ve made this over 40 times and it NEVER disappoints.

Here’s this recipe for Easy Vegetable Quiche.

Easy Vegetable Quiche

Please note: this makes 2 servings (they are really large, good-sized servings). You can double or (even triple) this if you want to feed four or more.

Also—I talk through the recipe here, but I added a recipe card at the end if you want to print it out.

Ingredients:

  • 2 c egg beaters
  • 1 c low-moisture part-skim 2 % mozzarella cheese
  • 1 c (2.63 oz) tomato, chopped
  • 1 c (1.55 oz) fresh broccoli, chopped
  • 1 c (1.99 oz) zucchini, chopped
  • 4 Light Swiss Laughing Cow Cheese Wedge
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder

Directions:

Preheat oven to 375.

Spray a baking dish (I use a pie pan) with Pam cooking spray.

Mix the ingredients together in a bowl.

Make sure to mash up the laughing cow cheese with a fork.

Pour mixture into prepared pan.

Bake 35 minutes.

Cut and serve immediately.

The taste is SO GOOD for a vegetable quiche. I think it’s the Laughing Cow Cheese and the flavor that it adds. If you want to up the flavor quotient, you can add an extra wedge of the cheese or try different flavors of the cheese. I also like to top it with fresh tomatoes (especially if they are cold) or sliced avocado or a little bit of extra cheese or even a little bit of Tony Chachere’s seasoning.

Easy Vegetable Quiche

This is such a yummy alternative to regular quiche. The Laughing Cow cheese gives it the best flavor and it’s a great dish for summer.
